Ingredients

Soy Curls Lettuce Wraps

  • 8 oz soy curls 225 g
  • ¾ cup Teriyaki sauce 180 ml
  • 2 tablespoons soy sauce
  • 12 leaves lettuce
  • 1 cup carrots shredded (150 g)
  • 2 cups red cabbage shredded (180 g)
  • ½ cucumber finely chopped
  • ½ cup green onion sliced
  • Vegan ranch for topping
  • Cilantro for topping
  • Sesame seeds optional for topping

Instructions

  • In a medium bowl, cover the soy curls in hot water for 15 minutes, then drain and press the excess water.
  • Place a large non-stick pan over medium heat and add the soaked soy curls together with the Teriyaki sauce and soy sauce.
  • Cooking, occasionally stirring, until all of the liquid has been absorbed.
  • Divide the flavorful soy curls between the lettuce “wraps” and top with fresh veggies, ranch, cilantro and sesame seeds.

Notes

  • You can create your own marinade using vinegar, sugar, tahini, chili sauce, garlic and ginger if you don’t have Teriyaki sauce at home.
  • Romaine or butter lettuce work well for the wraps!
