Soy Curls Lettuce Wraps 8 oz soy curls 225 g ¾ cup Teriyaki sauce 180 ml 2 tablespoons soy sauce 12 leaves lettuce 1 cup carrots shredded (150 g) 2 cups red cabbage shredded (180 g) ½ cucumber finely chopped ½ cup green onion sliced Vegan ranch for topping Cilantro for topping Sesame seeds optional for topping
In a medium bowl, cover the soy curls in hot water for 15 minutes, then drain and press the excess water.
Place a large non-stick pan over medium heat and add the soaked soy curls together with the Teriyaki sauce and soy sauce.
Cooking, occasionally stirring, until all of the liquid has been absorbed.
Divide the flavorful soy curls between the lettuce “wraps” and top with fresh veggies, ranch, cilantro and sesame seeds.
You can create your own marinade using vinegar, sugar, tahini, chili sauce, garlic and ginger if you don’t have Teriyaki sauce at home.
Romaine or butter lettuce work well for the wraps!
