Best Dairy-Free French Onion Dip

1 cup vegan sour cream 240 g 2 yellow onions finely diced 2 garlic cloves minced 1 tbsp nutritional yeast ⅔ cup veggie broth to sauté (150 ml) 1 tbsp soy sauce ½ tsp salt Fresh parsley for topping
Heat a cast iron skillet over medium heat, add the diced onion and 1 tbsp veggie broth. Cook for 2-3 minutes, stirring frequently.
Add the garlic and the rest of the veggie broth. Mix and then put a lid on the skillet.
Simmer over low heat for 15 minutes until the liquid evaporates and the onion is caramelized.
Let cool completely.
In a medium bowl, add the cooked onion with the rest of the ingredients. Mix to combine.
Garnish with fresh parsley.
Store your dip in an airtight container for up to 4 days in the fridge.
You can sauté the onion in olive oil instead of veggie broth if wanted — this results in a different flavor.
