Ingredients

  • 1 cup vegan sour cream 240 g
  • 2 yellow onions finely diced
  • 2 garlic cloves minced
  • 1 tbsp nutritional yeast
  • cup veggie broth to sauté (150 ml)
  • 1 tbsp soy sauce
  • ½ tsp salt
  • Fresh parsley for topping

Instructions

  • Heat a cast iron skillet over medium heat, add the diced onion and 1 tbsp veggie broth. Cook for 2-3 minutes, stirring frequently.
  • Add the garlic and the rest of the veggie broth. Mix and then put a lid on the skillet.
  • Simmer over low heat for 15 minutes until the liquid evaporates and the onion is caramelized.
  • Let cool completely.
  • In a medium bowl, add the cooked onion with the rest of the ingredients. Mix to combine.
  • Garnish with fresh parsley.

Notes

  • Store your dip in an airtight container for up to 4 days in the fridge.
  • You can sauté the onion in olive oil instead of veggie broth if wanted — this results in a different flavor.
