Ingredients
One-Pot Ratatouille
2tbspolive oil
1large oniondiced
3clovesgarlicminced
1small eggplantdiced
1large zucchinidiced
2bell pepperschopped
2large tomatoeschopped
2tbsptomato paste
1tspdried oregano
1tspdried basil
½tspdried thyme
Salt and pepper to taste
Fresh basilfor topping
Instructions
Place a large pot over medium heat and add the olive oil and onion. Sauté until translucent, about 3-5 minutes.
Stir in minced garlic, diced eggplant, zucchini, and bell peppers. Continue to sauté for about 5 minutes, until the vegetables start to soften.
Add tomatoes and spices and stir in the tomato paste.
Reduce heat to low and let simmer for 20-25 minutes, stirring occasionally. Once the vegetables are tender, turn off the heat.
Adjust with seasonings to taste preferences, then serve warm with crusty bread. Top with fresh basil if wanted. Enjoy!
Notes
Add a pinch of red pepper flakes for a little heat.
