Ingredients

One-Pot Ratatouille

  • 2 tbsp olive oil
  • 1 large onion diced
  • 3 cloves garlic minced
  • 1 small eggplant diced
  • 1 large zucchini diced
  • 2 bell peppers chopped
  • 2 large tomatoes chopped
  • 2 tbsp tomato paste
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • ½ tsp dried thyme
  • Salt and pepper to taste
  • Fresh basil for topping

Instructions

  • Place a large pot over medium heat and add the olive oil and onion. Sauté until translucent, about 3-5 minutes.
  • Stir in minced garlic, diced eggplant, zucchini, and bell peppers. Continue to sauté for about 5 minutes, until the vegetables start to soften.
  • Add tomatoes and spices and stir in the tomato paste.
  • Reduce heat to low and let simmer for 20-25 minutes, stirring occasionally. Once the vegetables are tender, turn off the heat.
  • Adjust with seasonings to taste preferences, then serve warm with crusty bread. Top with fresh basil if wanted. Enjoy!

Notes

  • Add a pinch of red pepper flakes for a little heat.
