Ingredients

Easy Leeks with Beans

  • 1 tbsp olive oil
  • 4 large leeks washed and trimmed
  • 1 14- oz can of navy beans drained
  • Vegan cheese sauce to taste

Instructions

  • Place a pan on low heat and add the olive oil. Slice the leek into discs and add them to the pan.
  • Sauté for 10 minutes, stirring occasionally, until the leek has slightly softened.
  • Stir in the beans and vegan cheese sauce and let cook until everything is warm, thick, and creamy.
  • Serve warm with potatoes!
