Ingredients

Stewed Rhubarb

  • 3 cups fresh rhubarb chopped
  • 1-2 tbsp water
  • ½ cup sugar
  • Pinch of cinnamon optional

Instructions

  • Place a saucepan over low-medium heat. Add the rhubarb, water, sugar, and cinnamon.
  • Stir to combine, then let the mixture warm for about 15 minutes. 
  • Once all of the sugar has dissolved and the rhubarb is broken down, remove from heat and let cool.
  • Serve over pancakes, waffles, ice cream, or vegan yogurt!

Notes

  • Any leftovers can be frozen.
  • Feel free to add more or less sugar!
