Ingredients
Stewed Rhubarb
3cupsfresh rhubarbchopped
1-2tbspwater
½cupsugar
Pinchof cinnamonoptional
Instructions
Place a saucepan over low-medium heat. Add the rhubarb, water, sugar, and cinnamon.
Stir to combine, then let the mixture warm for about 15 minutes.
Once all of the sugar has dissolved and the rhubarb is broken down, remove from heat and let cool.
Serve over pancakes, waffles, ice cream, or vegan yogurt!
