Ingredients
Vegan Taco Soup
1large oniondiced
1tablespoonolive oil
4teaspoonstaco seasoning
1cupBeyond Meat crumbles
4cupsvegetable broth
1 10-ozcan diced tomatoes
1 15-ozcan pinto beansdrained
1 15ozcan kidney beansdrained
1 15ozcan black beansdrained
1cupfrozen corn
Lemon juiceto taste
Tortilla chips
Vegan shredded cheese to taste
Instructions
In a medium-sized pot, sauté onion in olive oil until translucent. Stir frequently to avoid sticking.
Add taco seasoning and vegan crumbles. Sauté for 3 more minutes.
Add vegetable broth, diced tomatoes, canned beans, and corn. Turn up the heat to bring your soup to a boil.
Reduce heat and simmer with a closed lid for 15 minutes.
Adjust to taste preferences and divide between serving bowls. Top with lemon juice, tortilla chips, and vegan shredded cheese. Enjoy!
Notes
Feel free to use your favorite vegan crumbles for this recipe. TVP also works. Omit entirely if wanted.
