Easy Vegan Muffins
1 ¼cupsall-purpose flour150 g
½cupsugar100 g
1 ½teaspoonsbaking powder
Pinchof salt
½cupsoy milk120 ml
¼cupcanola oil60 ml
1teaspoonvanilla extract

Instructions
Preheat your oven to 400° F (200° C) and line a muffin tin with liners.
Combine all of the dry ingredients in a large bowl and mix until well combined: flour, sugar, baking powder, and salt.
Using another bowl, whisk together the wet ingredients for the muffins: soy milk, oil, vanilla, and Just Egg.
Pour the wet over the dry ingredients and add in raisins, nuts, fruit, or chocolate chips to your liking. Mix with a spoon until combined but make sure not to over-mix!
Divide the batter between 12 muffin tins and place in the oven to bake for 20 minutes or until a toothpick inserted in the center comes out clean.
Let the muffins cool before eating! Enjoy.
Notes
Use gluten-free flour blends to make these muffins gluten-free.
Swap soy milk for almond or oat milk if wanted.
