Ingredients

Beyond Meat Sausage Rolls

  • 6 Beyond Meat sausages cut into smaller pieces
  • 1 sheet vegan puff pastry thawed
  • 2 tablespoons aquafaba chickpea liquid, for glazing
  • Sesame seeds optional for topping
  • Dips of your choice

Instructions

  • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • Slice your puff pastry into 6 even rectangles and place one vegan sausage on each rectangle.
  • Roll them up one by one and slice each roll into 2 or 3 equal-sized pieces, depending on how small you want your vegan snacks to be.
  • Line all puff pastry “pigs” next to each other on your prepared baking sheet, seam side down.
  • Brush each roll with the aquafaba and sprinkle with a few sesame seeds.
  • Place in the oven and bake for 15 minutes until golden brown and flaky!
  • Serve with your favorite dips such as ketchup, mustard, vegan mayo, jelly, or buffalo sauce.

Notes

  • If you can’t find Beyond Meat sausages, try Impossible Meat, Field Roast, Upton, Tofurky, or Yves.
  • You can add some vegan cheese on top of each sausage before baking if you like.
  • Store any leftover vegan pigs in a blanket in an airtight container for 2-3 days.
