Pineapple Fried Rice 1 tablespoon sesame oil 1 onion diced 1 tablespoon fresh ginger minced 1 cup finely chopped veggies of choice 130 g 1 ½ cups pineapple cubed (340 g) ¼ - ½ cup stir fry sauce 4 oz firm tofu 110 g, crumbled 3 cups cooked rice 600 g
Place a large pan over medium heat and add sesame oil and onion. Cook for 5 minutes, stirring occasionally.
Add ginger, veggies, and pineapple. Cook until soft, then add tofu and the stir-fry sauce. Cook for 5-7 minutes, stirring frequently.
Add cooked rice, mix thoroughly, and heat until warm.
Serve topped with fresh herbs or green onion!
Carrots, bell pepper, zucchini, broccoli, and mushrooms work well for this recipe.
Make it oil-free by sautéing your veggies in water or broth.
