Ingredients

Blueberry Oatmeal

  • 1 cup rolled oats 90 g
  • 2.5 cups soy milk 600 ml
  • 1 cup blueberries 150 g
  • 2 tablespoons brown sugar

Toppings (optional)

  • Sliced apple
  • Sliced banana
  • Raisins
  • Crushed nuts
  • Toasted coconut

Instructions

  • Put the oats, soy milk, blueberries and sugar in a medium-sized saucepan. Place over high heat and bring to a boil, stirring frequently.
  • Cook over medium heat for 8-10 minutes until the oats have absorbed all of the liquid, stirring occasionally.
  • Remove from heat and divide between two serving bowls. Add your favorite toppings and enjoy!

Notes

  • You can use fresh or frozen blueberries for this recipe. Instead of soy milk, use any dairy-free milk of your choice.
