Ingredients

Quick Chocolate Truffles

  • 1 cup cooked cannellini beans 260 g
  • 5 dates pitted
  • 3 tablespoons cocoa powder divided
  • ½ teaspoon pure vanilla extract
  • ¼ teaspoon coarse salt
  • Maple syrup optional

Instructions

  • Put the beans and dates into a food processor and pulse until a crumbly mixture forms.
  • Pour in a tablespoon of water and syrup if wanted run the food processor until a smooth paste forms.
  • Add 2 tablespoons of cocoa powder, vanilla extract and salt. Process until everything is well incorporated and the mixture is smooth and creamy.
  • Place the remaining tablespoon of cocoa powder in a wide, shallow bowl.
  • Scoop out the bean mixture one tablespoon at a time and roll into 6 truffles.
  • Coat the truffles in the cocoa powder and transfer them to an airtight container. 
  • Chill for a few hours before serving.

Notes

  • Make them creamier and more indulgent by adding 1-2 tablespoons of nut butter to the bean mixture in the food processor!
  • Add melted chocolate to make it richer and more chocolatey and feel free to make your truffles sweeter by adding some maple syrup.
  • This recipe can easily be doubled or tripled to accommodate all party guests!
