Ingredients
Quick Chocolate Truffles
1cupcooked cannellini beans260 g
5datespitted
3tablespoonscocoa powderdivided
½teaspoonpure vanilla extract
¼teaspooncoarse salt
Maple syrupoptional
Instructions
Put the beans and dates into a food processor and pulse until a crumbly mixture forms.
Pour in a tablespoon of water and syrup if wanted run the food processor until a smooth paste forms.
Add 2 tablespoons of cocoa powder, vanilla extract and salt. Process until everything is well incorporated and the mixture is smooth and creamy.
Place the remaining tablespoon of cocoa powder in a wide, shallow bowl.
Scoop out the bean mixture one tablespoon at a time and roll into 6 truffles.
Coat the truffles in the cocoa powder and transfer them to an airtight container.
Chill for a few hours before serving.
Notes
Make them creamier and more indulgent by adding 1-2 tablespoons of nut butter to the bean mixture in the food processor!
Add melted chocolate to make it richer and more chocolatey and feel free to make your truffles sweeter by adding some maple syrup.
This recipe can easily be doubled or tripled to accommodate all party guests!
