Ingredients

Zucchini Ricotta Tart

  • 1 sheet puff pastry thawed from frozen
  • ¾ cup vegan ricotta 185 g
  • 2 tablespoons pesto
  • 2 zucchini thinly sliced
  • 1 summer squash thinly sliced
  • Salt & pepper to taste
  • Vegan shredded cheese optional

Instructions

  • Preheat oven to 400 °F (200 °C) and line a baking sheet with parchment paper.
  • Unfold and roll out the puff pastry rectangle. Transfer to the baking sheet and fold in the borders, about ½ inch wide.
  • Combine ricotta and pesto in a small bowl until homogenous, then spread it over the top of the puff pastry.
  • Arrange the sliced zucchini and summer squash over the ricotta mixture, creating a pretty pattern.
  • Season with salt and pepper and add some vegan cheese shreds if wanted, then transfer the tart to the oven.
  • Bake for 15-17 minutes, then remove and let cool for 5 minutes before slicing.

Notes

  • You can also use any other veggies like bell peppers, onion or tomatoes for this recipe.
  • Feel free to omit the pesto if you’re not a fan.
