Ingredients
3cupsdatespitted
½cupshredded coconut
2tablespoonsalmond butter
3tablespoonscocoa powder
2teaspoonsvanilla extract
Pinchof salt
Instructions
Add dates to a food processor and pulse until they are broken down.
Combine the rest of the ingredients in a mixing bowl, then add the pureed dates.
Mix until well incorporated, then roll into 12 individual balls.
Place them next to each other on a parchment paper-lined sheet.
Refrigerate for 1-2 hours until firm, then enjoy!
Notes
Try the use Medjool dates for this recipe! Figs or apricots also work.
