Ingredients

Vegan Mango Lassi

  • 2 ripe mangoes peeled and cut
  • 1 cup vegan yogurt*
  • ½ cup coconut milk
  • 1 tablespoon maple syrup optional
  • Pinch of cardamom
  • Fresh mint leaves for garnish
  • Ice cubes optional

Instructions

  • Add chopped mangoes, yogurt, coconut milk, syrup, and cardamom into a blender. Blend until smooth and creamy.
  • Adjust to your liking, then pour into glasses. Add ice cubes for a chilled lassi and decorate with fresh mint leaves. Enjoy!

Notes

  • *we like soy and coconut yogurt in this lassi
  • Add a pinch of cinnamon if you like.
