Ingredients
Vegan Tartare
4medium beetrootscooked
1small red onionfinely chopped
2tbspcapersfinely chopped
1tbspDijon mustard
1tbspolive oil
1tsplemon juice
1tspbalsamic vinegar
Salt and pepper to taste
Fresh parsleyfor garnish
Vegan cream cheese and crackersfor serving
Instructions
Place the diced cooked beetroots in a mixing bowl. Add chopped red onion, mustard, olive oil, lemon juice, and balsamic vinegar.
Season with salt and pepper to taste, then gently mix with a spoon until everything is well combined.
Use a ring mold on a serving plate to create a classic tartare shape.
Spoon the beetroot mixture into the mold, pressing it gently down.
Carefully remove the mold to leave a neatly stacked tartare. Repeat with the remaining mixture.
Drizzle tartare with olive oil and garnish with fresh parsley.
Serve with a dollop of vegan cream cheese and toasted bread or crackers. Enjoy!
