Ingredients

Pecan Pie Balls

  • cup Medjool dates pitted (60 g)
  • 1 cup pecans 125 g
  • 2 tablespoons almond butter
  • ¼ cup rolled oats 22 g
  • ½ teaspoon cinnamon
  • Vanilla extract optional
  • Pinch of salt optional

Instructions

  • Place the pitted dates in a shallow bowl and cover with hot water. Let them sit for 30 minutes, then drain.
  • Add all ingredients to a food processor and process until a homogeneous mixture forms. You might need to add some extra water if the mixture doesn’t come together.
  • Using your clean wet hands, roll the mixture into individual balls.
  • Enjoy immediately or store them in a container in the fridge or freezer!

Notes

  • You can use any type of date you have at home for this recipe.
  • Replace the oats with ground nuts for a grain-free version.
