Place the pitted dates in warm water for about 2 hours, then drain them.
Add the hazelnuts to a food processor and process until they turn into hazelnut butter. This will take around 2-3 minutes, so don’t give up! Stop and scrape down the sides of the food processor as needed.
Add the drained dates, cocoa powder, and salt. Process again until you create a homogenous mixture. Adjust to taste preferences by adding some syrup for more sweetness or more cocoa powder.
Use immediately as a spread or transfer into a lidded jar and store for up to a month.
