Ingredients
Pecan Date Bites
1cupdatespitted

½cuppecans
½tspvanilla extract
Pinchof salt
Coating
1cupdark chocolate chips
1tspcoconut oil
Instructions
Place all ingredients for the bites in a food processor: dates, pecans, vanilla, and salt.
Mix until everything is well incorporated. Add a splash of water or almond milk if needed.
Spoon the mixture into 10-12 balls and line them on a parchment paper-lined baking sheet. Transfer to the freezer and let chill for 10-15 minutes.
In the meantime, melt chocolate chips and coconut oil on the stove or in the microwave.
Remove the balls from the freezer and carefully dip each of them into the melted chocolate. Use a toothpick or fork and make sure they are completely coated.
Allow any excess chocolate to drip off, then place them back in the freezer. Repeat until all chilled balls are coated.
Store in the fridge until ready to enjoy!
Notes
The pecan date bites can be stored in the freezer for up to a month.
You can use another nut for this recipe.
