Ingredients

Pecan Date Bites

  • 1 cup dates pitted
  • 1 cup dates pitted
  • ½ cup pecans
  • ½ tsp vanilla extract
  • Pinch of salt

Coating

  • 1 cup dark chocolate chips
  • 1 tsp coconut oil

Instructions

  • Place all ingredients for the bites in a food processor: dates, pecans, vanilla, and salt.
  • Mix until everything is well incorporated. Add a splash of water or almond milk if needed.
  • Spoon the mixture into 10-12 balls and line them on a parchment paper-lined baking sheet. Transfer to the freezer and let chill for 10-15 minutes.
  • In the meantime, melt chocolate chips and coconut oil on the stove or in the microwave.
  • Remove the balls from the freezer and carefully dip each of them into the melted chocolate. Use a toothpick or fork and make sure they are completely coated.
  • Allow any excess chocolate to drip off, then place them back in the freezer. Repeat until all chilled balls are coated.
  • Store in the fridge until ready to enjoy!

Notes

  • The pecan date bites can be stored in the freezer for up to a month.
  • You can use another nut for this recipe.
