Southern-style coleslaw 16 oz mixed cabbage shredded 1 medium carrot grated 1 cup vegan mayonnaise 2 tablespoons dijon mustard 2 tablespoons vinegar 3 tablespoons sugar ½ teaspoon salt 2 teaspoons celery seeds 1 teaspoon onion powder
Mix together all ingredients except for the cabbage and carrots in a large bowl. Adjust to taste preferences.
Add the shredded cabbage and carrot, give it a good stir until well-combined, then cover the bowl.
Place in the fridge for at least an hour before serving and store any leftovers for up to 3 days in the fridge.
Toss your coleslaw before serving!
This recipe can be made up to a day in advance. Drain any excess liquid before eating.
