Ingredients

Strawberry Chia Pudding

  • 1 cup fresh strawberries (extra for garnish!)
  • 1 cup coconut milk canned
  • 2 tablespoons syrup
  • 1 teaspoon vanilla extract
  • ¼ cup chia seeds
  • Mint leaves optional
  • Granola optional

Instructions

  • Put strawberries, coconut milk, syrup, and vanilla extract in a blender. Blend until smooth, adding more liquid as needed.
  • Pour the strawberry mixture into a bowl and add the chia seeds. Whisk well to combine.
  • Cover the bowl and refrigerate for at least 2 hours (better overnight) to let the chia seeds absorb the liquid and create a pudding-like consistency.
  • Once you’re ready to serve the chia pudding, remove it from the fridge and give it a good stir.
  • Divide between serving bowls and garnish with extra strawberries, granola, and fresh mint leaves. Enjoy!

Notes

  • Adjust sweetness level to your preferences.
  • The longer the pudding chills, the thicker it will become! If it’s too thick, thin it out with some plant-based milk and stir well.
  • Any leftovers can be stored in an airtight container in the fridge for up to 4 days.
