Strawberry Chia Pudding 1 cup fresh strawberries (extra for garnish!) 1 cup coconut milk canned 2 tablespoons syrup 1 teaspoon vanilla extract ¼ cup chia seeds Mint leaves optional Granola optional
Put strawberries, coconut milk, syrup, and vanilla extract in a blender. Blend until smooth, adding more liquid as needed.
Pour the strawberry mixture into a bowl and add the chia seeds. Whisk well to combine.
Cover the bowl and refrigerate for at least 2 hours (better overnight) to let the chia seeds absorb the liquid and create a pudding-like consistency.
Once you’re ready to serve the chia pudding, remove it from the fridge and give it a good stir.
Divide between serving bowls and garnish with extra strawberries, granola, and fresh mint leaves. Enjoy!
Adjust sweetness level to your preferences.
The longer the pudding chills, the thicker it will become! If it’s too thick, thin it out with some plant-based milk and stir well.
Any leftovers can be stored in an airtight container in the fridge for up to 4 days.
