Ingredients

Grilled Corn with Lime and Chili

  • 4 ears of fresh corn husked
  • 2 tbsp olive oil
  • 1 lime juiced
  • 1 tsp chili powder
  • Salt to taste
  • ½ tsp smoked paprika optional
  • Fresh cilantro optional

Instructions

  • Preheat your grill to medium-high heat. Brush the corn ears with olive oil, ensuring they are coated evenly.
  • Place the corn on the grill grates and grill for 10-12 minutes, until charred in spots and tender. Be sure to turn it occasionally to avoid burning!
  • Meanwhile, prepare the seasoning. Combine lime juice, chili powder, salt, and smoked paprika (if using) in a small bowl.
  • Once the corn is slightly charred, remove it from the grill and immediately brush it with the lime-chili mixture.
  • Serve warm sprinkled with fresh cilantro if wanted. Enjoy!

Notes

  • Add a pinch of cayenne pepper for extra heat!
  • This tastes great when served with extra lime wedges.
