  • 1 tbsp freshly squeezed lemon juice

  • 2 tsp rice syrup
  • 2 tsp vanilla extract
  • 1 tbsp arrowroot powder

Instructions

Make the Potato Salad

  1. Chop your fresh veggies and put them in a large bowl together with your cooked potatoes.
  2. Top with vegan mayo, mix well, taste test and adjust to preferences. Refrigerate for a few hours before serving.

Make the Fruit Tarts

  1. Mix coconut milk with arrowroot powder in a small saucepan, then add all of the other ingredients except for the crust and berries.
  2. Bring to a boil while stirring, until the mixture thickens. Divide between 6 tart tins filled with vegan crust, then refrigerate them for 2-4 hours.
  3. Once you are ready to serve them, top the mini tarts with fresh blue & red berries!

Make the Vegan Wings

  1. Mix chickpea flour, spices and soy milk to create a homogenous batter. Chop your cauliflower into small pieces and boat them evenly with the batter.
  2. Place on a baking tray and bake until crispy. Remove, coat with Buffalo sauce, and bake again for a few more minutes.
  3. Remove from the oven and serve with fresh veggies and vegan dips.

Make Vegan Kidney Bean Burgers

  1. Saute onion and garlic for a few minutes, then add the mushrooms and cook until all liquid has evaporated.
  2. Put along with the beets, flaxseeds, walnuts, kidney beans, herbs and spices into a food processor. Pulse a few times to obtain a crumbly texture.
  3. Form into patties and bake at 350° F for 30 minutes, flipping them after 15 minutes. Remove once done, then assemble your burgers with mashed avocadoes, lettuce, mustard and BBQ sauce on buns.
