Vegan Thanksgiving Leftover Wraps
2 tortillas of choice
4 slices of vegan holiday roast or baked tempeh
4 tablespoons vegan gravy
½ cup mashed potatoes (125 g)
1 handful mixed Fall salad (leafy greens, roasted carrots, red cabbage, etc.)
2-3 tablespoons cranberry sauce
Reheat your leftover gravy and sliced vegan roast or tempeh using a microwave or stove.
Divide the leftover mashed potatoes between two tortillas and spread them evenly on the bottom ⅓ of each wrap, leaving some room at the bottom edge.
Drizzle the potato layer with warm gravy, then add 2 slices of vegan roast on each tortilla.
Now add some roasted or fresh veggies from Thanksgiving, this can be a mixed fall salad or maple carrots etc.
Top with cranberry sauce, then fold each tortilla tightly, tucking in all of the veggies with the first roll then rolling firmly to the end.
Cut in half and enjoy!
